This beer was created using second-use organic 'Rival' apricots and 'Red Haven' peaches grown at Rama Farm on a hillside overlooking a wide and slow section of the Columbia River. The fruit was refermented with a blend of saison which was barrel fermented and aged in second-use Big Gin barrels. Refermented to condition in the bottle.Bottled 02/13/2025Conditioned with: Organic sugar.Cellar: I continue to recommend drinking peach beers within a year or so. Best by fall 2026.
