Elmwood: Late Harvest

This cider was made from a blend of heirloom cider apples and has been cold-conditioning for nearly a year, fermented with white wine yeast to complete dryness. This cider is naturally carbonated with a very light effervescence, a complexity we prefer. We get notes of crisp apples, lemon verbena, pineapple, white peach, and wet slate.
