Solera Sour Project 21 I 05 - Rye

Our 5th bottling of our Solera Sour Wild Project this year (2021). After been working on the Solera project for quite a while now, we decided to go for three different base recipes within this project, with each of them having its own character. Having released the 'wheat' version recently, this is the second one; the recipe being based on rye malts. We've done a subtle addition of pink pepper which complements the character of the rye. With the Brett being quite present (and the other yeast strains used) this version hints more towards a Sour Saison.
