Of the Eye: Stayman

Our "Of the Eye" series of ciders are made with a singular variety of apple, designed to showcase the distinct nature of select PA apples. The Stayman apple is an older US variety discovered growing as a chance seedling in the mid 1800s. The apples in this cider were grown at Weaver’s Orchard, harvested and pressed on our 125 year old press in 2023, then wild fermented and aged for a full year. An earthy nose gives way to an intensely dry and crisp apple on the palate, strong tannic structure, with wild notes of funk. With nothing but fermented apples, this is truly a traditional cider.
