What do stone quarries, thirsty miners and the French countryside of Provence have to do with our newest Single Tank beer? Plenty. The farmhouse ale style known as grisette gets its name from gris, the French word for “gray.” Some say the beer earned that name due to its pale color (the result of a high percentage of wheat in the grain bill); others say it refers to the gray dust that would cover miners working stone quarries in the area; still others think it’s a nod to the gray pinafores worn by women serving the beer to said miners. While our grisette displays the low ABV and bright, saison-like flavor common in traditional examples of the style, we also took a few unconventional turns, adding spelt and golden oats for a bigger-than-usual body and infusing the beer with our custom Herbs de Provence spice blend featuring French lavender, fennel, basil, marjoram, rosemary, tarragon, thyme and savory leaves.
