Cloudberry mead with vanilla beans. SBT special.Cloudberries look almost like orange blackberries, but taste nothing like it. They have an earthy, soursweet and slightly musky flavor.The mead went through a two-month-long, slow and cold fermentation to preserve every nuance of these mega-exclusive (and expensive) berries.Cloudberries naturally contain high levels of benzoic acid, making them hard to ferment. In consequence we had to add some water in the production of this mead, to get the fermentation going.
