A part of our red saison from 2019 was aged in a barrel that previously had only one batch of Cabernet Sauvignon wine. We boosted the already present microorganisms in the wood with a small addition of roeselare blend to ensure a more noticeable pH drop. The effect was as desired, with lovely notes of both lactic and acetic acid developing, and some brett esters and funk as well. Some wine character seeped into the beer as well, which alongside the woodiness really give this beer Flanders like complexity
