Cold Chisel

An IPA fermented with a traditional ale yeast, but at colder than normal temperatures. The colder fermentation results in a cleaner yeast profile, allowing a blank canvas for the malt and hops to take control and create some fun hop expressions. The beer is then cold conditioned similar to a lager. Cold Chisel is brewed with oats and wheat and hopped heavily with Columbus, Amarillo, Cascade, and Taiheke hops. Crisp and clean with a pleasing bitterness finishing with citrus and overripe stone fruit.
