Like Ol' Jack Burton says "I never drive faster than I can see. Besides that, it's all in the reflexes." That's kind of how we brew around here. Always taking our time and following tradition and science, but sometimes you gotta trust your gut and let the reflexes take control.With our first Kolsch style brew, that's exactly what we did. The beer came in a little hot at 6.5% ABV so our brewing reflexes told us a nice subtle dry hop was in order. Ol' Jack Burton didn't let us down and this beer is an homage to him and trusting our reflexes to show us the way.Nice soft rounded malt profile with subtle notes of bread and the slightest hint of honey while finishing so crisp and smooth. Complimented with the herbal spicy noble hop character
