Blending traditional techniques with innovations straight from our brewers’ imaginations, we've introduced the classic use of oysters in a dark beer to this luscious lager-style porter—itself a unique style that originates in the Baltic region. Brewed with specialty grains malted right here in Oregon, we added fresh native Yaquina Bay oysters toward the end of the boil, which lend a gentle salinity to the beer’s wonderfully balanced grist profile of roasty dark malt, dried fruit, and dark chocolate. The Mollusk was cold fermented and lagered for over two months, producing a smooth finish and bright clarity that was enhanced by the minerals from the oyster shells, which also aid in natural clarification.
