Number #7 in the Chiller series sees a re-boot of the hugely popular Cold IPA from the pilot system a few weeks back. Due to our chiller restraints this is a Kveik ferment - unusual for a clean, hoppy IPA style. However a cooler fermentation temp (think 23 degrees instead of 30 for a pitch temp and free rise to 32 instead of 37 - kveik yeast is crazy!) as well as increased tank pressure reduces the ester and high alcohol production as well as yeast growth thereby keeping flavours clean and uncomplicated which allows the hops to shine. Pressure in tank was 29psi actual (14.5psig) which would be similar to diving at 10m underwater for a real world example. How cool is yeast?!
