One of my favourite times for foraging is elderflower season. First coming out in early spring - the window of opportunity to pick them is very tight. When the time comes we have a brewery day out and go flower picking. Along with my Christmas homemade Elderflower Champagne we have made this seasonal release every year since 2018. It combines the delicate sweet floral aromas of these tiny flowers with the fresh tang of seasonal cucumbers.Very clean, dry and refreshing with an early tickling tartness that finishes fast and quenching
