We put a part of our saison 00 in a wooden barrel that held white wine before that. We let the microorganisms present in the wood do their job, and that resulted in a super dry beer if it already wasn't such. Some light sourness developed as well, joined by hints of wood and an unmistakable wine character. The soft carbonation of this beer keeps the tartness moderate, and enhances the wine like feel.
