Absinthe-inspired mead w/ wormwood, mugwort, green + star anise, fennel, hyssop, sage, angelica, coriander, elderflower, lemon zest & grape brandy.Billy's Notes: The idea of an absinthe-inspired mead had been floated by our production team over a year ago, & we instantly knew this is something we HAD to do. I had always been under the impression we couldn't legally use wormwood in a mead, & without that legendary botanical, we figured it would be a lost cause.Yet turns out we were able to get wormwood approved by the Federal powers that be! We decided the perfect base was our already complex & herbaceous ulmo blossom traditional, & from there we added a healthy dose of bitter wormwood & locally foraged bitter mugwort. With the sweet/bitter balance nailed we layered on 9 other botanicals & some brandy for a nice boozy backbone. We wanted this to taste like a traditional "absinthe drip".Profile: Sweet upfront with a herbaceous bitterness that quickly kicks in & balances the finish.
