When we revisited our staff-designed beers for 2021, we dipped our toes into a truly old school West Coast IPA with Arron’s Disco Infiltrator. Whilst it was an undoubtedly very good beer, we agreed that there was STILL room for improvement. Seafoam is Disco Infiltrator upgraded with the entire brew-team’s input. Keep the Crystal malt, halve the amount. Up the amount of bittering hops, keep the old school pillars, introduce some new school for balance. Letting all of the Cascade and Simcoe do the talking for the old school before Idaho 7 backs things up, the result is a slight-amber pour positively bursting with dank resinous notes, earthy pine, and just a little hint of pineapple to remind you that this is a beer that nods to the old school with a foot in the new school.
