Prototype: Iced Tea Sour

This is the first batch of a new series we’re testing to highlight expressive teas from Budapest's own Flying Bird Teahouse! The brew’s foundation is a bright kettle sour base with clean acidity that lets our tea selections shine through and allows us to experiment with a mixture of hot and cold side additions.For this first release, we’ve picked a 15-year-old Shu Puerh from the mountains of China’s Yunnan province. An extremely long, gentle fermentation and maturation endows this complex tea with earthy walnut flavors, subtle hints of apricot, and a lingering malty sweetness.These aromas mingle beautifully with our sour base to produce a refreshing beer that’s earthy, lightly fruity, and refreshingly effervescent – a bit like an alcoholic kombucha!
