Time & Space is our first foray into barrel-aged mead. This mead was made with Mexican mesquite blossom honey and Chilean Pinot Noir juice. It was aged on whole Montmorency and Balaton cherries, then racked into a freshly-dumped Distillery 291 Bourbon Barrel.291 makes award-winning bourbon aged in small barrels along with hand-cut and charred Colorado aspen staves. The bourbon barrel primarily contributes flavors of oak, vanilla, baking spices, and peanut brittle. The smooth and sweet grape-cherry wine is fortified by a substantial bourbon topnote.
