Trillium Brewing Co first visited Bellwoods back in 2017, and have been on call ever since to offer insights and encouragement throughout our modest growth spurts.So a couple of weeks ago when JC and Esther Tetreault were back to give their keynote speech at the OCB, we enticed them into a wee detour and fired up another batch of Cutting Bells — the DIPA based on their Cutting Tiles, made with local Ontario honey.Hoppy, slightly sweet, and tied to the Ontario terroir, Cutting Bells is the perfect mashup of US and Canadian DIPAs. It features notes of tropical mango, juicy pineapple, fresh berries and meadow flowers.
