This beer was inoculated overnight in our coolship. The following day we pumped the wort into a barrel and pitched a mixed culture of yeast and bacteria. The beer fermented + aged in the ex-wine french oak barrel for over 1 year. Finished with a small amount of rhubarb to compliment characters already present in the base beer. Bottle/Keg conditioned.
