For the Stonebarn Truffle Beer we chose the IPA at 5.9% ABV as the base. Using Australian pale malt, which has a hint of caramel for colour, the maltiness does a great job of carrying the flavour of the hops and Black Perigold Truffle (0.01%).By restraining the hopping and using Amarillo and Centennial hops the beer remains accessible with a bitterness of around 35 BUs and produces a magnificent copper colour.
