Belgian Witbier

Light-bodied, effervescent and refreshing, this mostly traditional Belgian style wheat ale is perfect for the last weeks of warm weather here in Ontario. We started off with a blend of pilsner malt, wheat and oats and fermented it on the dry side, before adding just the right amount of fresh orange zest, Indian coriander and grains of paradise post-fermentation. The spices are present without overpowering, resulting in hints of freshly peeled orange, pepper, candied ginger and cardamom. The finished product has been can-conditioned to achieve champagne-like carbonation that compliments the gentle twang of acidity from the wheat malt, resulting in a witbier that comfortable straddles the line between traditional and modern.
