Keyboard Warrior is a mixed culture saison conditioned on cherries that is excitingly tart, funky & fruity. This was brewed with a special malt blend accented by heavy use of spelt for a rustic and artisanal backbone. The magic really happened though when we unleashed our house blend of farmhouse yeast, funky Brett strains and juicy and tart lactobacillus to ferment this wonder in one of our American oak foeders for six months. Next we piled on over 500 hundred pounds of whole tart cherries for another three months of refermentation and conditioning.Keyboard Warrior has a mild farmhouse funk with bright stone fruit, cherry & raspberry flavor kisses with earthy notes of chocolate and spice.
