Summerthyme starts as a mostly traditional kolsch, but is infused with fresh Lemon Thyme in both the whirlpool and post-fermentation. Unlike common thyme, Lemon Thyme carries very little savory character and instead brings a bright lemony, herbal spice that pairs wonderfully with the delicate, fruity kolsch base.
