Come on down and try the latest release on our small batch, experimental Pilot tap.It’s not every day that a yeast lab pops up down the road ready to work with the local Brewers, but in an exciting move for Wollongong craft beer scene that’s the case with Mogwai Labs.This of the first of hopefully many collabs with Josh from Mogwai Labs, this time utilising one of his Norwegian Farmhouse strains.Pouring a bright gold, not too heavy on the funk with ripe apple, light banana and melon coming through in the ester profile. Toffee and spicy bread from the rye, raw wheat and a drizzle of honeycomb balance out the fruity flavours and there’s a bit of a geranium pop from the coriander. Complex, yet smooth, dry and easy drinking this one’s a corker for a sunny arvo in the beer garden.
