Oubliette of Staves III has notes of dried flowers, graphite, cloves, and lime zest. This barrel-aged saison displays quintessential Belgian yeast character from Brasserie Blaughies, which is the basis from which our cellar culture grew and adapted within our barrels.Canadian cereal grains of barley, spelt and buckwheat, as well as French Aramis and German Perle hops were used, along with a mash regime to boost phenolic character. The result is a robust saison that was barrel-fermented and aged for 20 months with Brettanomyces to temper its young character into a mature saison of grace and elegance.
