Our Vintage Strawberry is a house saison infused with spring strawberries from Nonsan, harvest of 2022.After primary fermentation, secondary fermentation and conditioning took place, with wild yeast (Brettanomyces) from the skin of the strawberries adding a little kick.The Brettanomyces strain from Nonsan adds surprisingly strong funkiness, compared to its Belgian and American counterparts.Over 14 months of aging, farmyard aromas and fruity esters developed in the beer.
