A lovely mellow expression of Harry Masters, which can be an austere and challenging variety, but in this blend has been given time to mature and develop. 18 months on from pressing the HMJ develops a much softer texture, with nutty tannins, that has been livened up with the splash of Foxwhelp - about 10% - to give this cider some juiciness and some acidity to balance the long, complex finish of classic bittersweet character.
