In the general spirit of dry January, we offer Buzzard. A low low 3% abv reset for the new year. Nice, easy flavor and feel with a potent, bright fruit punch note that avoids coming off as overly bitter or harshly hoppy.The approach was to use some newer thiol-based tropical beer techniques along with newer hop extracts to avoid overpowering this small beer with an oversized hop load. We want it to drink light and refreshing while still hitting hoppy and fruity. To load up on thiol precursors, we add Tradition hops in the mash and ferment with Omega Yeast’s Cosmic Punch yeast strain that convert thiol precursors into active thiols which taste like passion fruit, white grape, and tropical fruits. We use hop extracts from Citra, as well as Strata and Cashmere hop pellets to keep things focused in candied tropical fruit punch territory. All of which allows the yeast character to shine alongside the hop character.
