As 'the funk' hit us for the second time, after brewing a golden Tripel Hop, we got the idea to use the sourness to create a raspberry beer, helped by a champagne yeast, and the result is very nice: a balanced sourness, the flavour of the raspberry, and enough alcohol to make it a degustation beer !
