Working with Tom from Little Earth Project in Edwardstone, we collaborated at Artefact on a special release, a Suffolk Honey Saison.Celebrating Suffolk, we used their organically grown barley and hops, choosing Boadicea for its light floral and sweet honey aroma. Adding local Suffolk honey late in the boil brings vibrant aromatics, including; eucalyptus, heather and fruit pollen. All brought together with a pitch of fruity ale and saison yeast.Expect notes of eucalyptus, bubblegum and pepper on the nose, finishing with sweet malt, spice and undertones of citrus, making this special beer something to savour.
