(2025) Over the centuries, Elderberries have been used and revered around the world as a beneficial plant ally. For instance, they have commonly been used as an immune system booster, and even magically, to create fortuitous conditions in life. Our Elderberry Honey started with a single varietal base cider, aged Gold Rush, then blended with over a pound per gallon of berries that were harvested from hedges right here in Kimberton, and finally, the addition of a bit of dry fermented honey wine. The resulting magic brings light berry notes, a subtle sweetness with a tinge of bitter, all in a dry, refreshing Cider.
