Selecting a thiol yeast with a strong β-lyase expression, we control the original gravity and only use Citra for dry hopping to highlight the unique fermentation characteristics. The resulting passion fruit and guava flavors are from a magical biotransformation between yeast, hops, and malt. Venturing into the grey, clarity emerges slowly.
