Of the Wild: This Is Brett

Yeast is all around us, in the air, on plants, and on flowers! We have a few Plum trees and two Springs ago used its flowers as the yeast source to ferment a batch of cider, a true “wild” fermentation. Some strain of Brettanomyces, a yeast sometimes used in Belgian-style beers, took hold of fermentation and laid claim to the cider. The strength of aroma and flavor took some time to settle down, but after two years, we feel that it’s come into its own. You’ll notice Brett on the nose, like walking into a Payless Shoe Store, and on the palate is a floral sweetness, not unlike a rubber flower hard candy. It’s a super-unique Cider, probably unlike any you’ve had before. This is Brett.
