Stake In the Tart (Bourbon Barrel-Aged)

Semi-sweet cider made with tart cherry pomace, apples, and a little cinnamon and vanilla, then aged in bourbon barrels for six months. Even though we used dried cherries, a strong note of tart cherries runs across palate.
