We've refermented organic BC apricots and apples, and aged them in bourbon barrels that were once used for maple syrup. Aged for over 6 months, you'll find notes of stone fruit, maple syrup, and apricot skin, all with a great acidity that is rich with bourbon and oaky tannins.
