Wheat beers are great, but ya know what else is? That's right. Spelt beers. We used some of the best spelt around, Elwha Spelt from Linc Malt in Washington, and some of the best pilsner malt around ( literally), Best Pilsner malt from Germany to make a twist on the classic style of Hefeweizen. But what to name this beer? Well, weizen is the German word for wheat, and dinkel is German for spelt, so after several sleepless nights of putting our keen minds to the task, we finally came up with the awe inspiring HEFEDINKEL.
