November 8, 2024, the days are darker and colder in many ways. The Cure’s “Faith” album plays in the background as I assemble this release.Comfort Compote is a dessert mead crafted for these days. It’s made with Polish honey, strawberries, sour cherries, plums, and gooseberries. The mead is aged for 6 months on Sri Lanka cinnamon, Canadian maple syrup, bourbon vanilla, and two types of oak, previously used with rum and bourbon. Warming, comforting.
