Our friend, Mark Hunter, is a long-time Sake maker who continues to experiment with the ancient beverage. We use the lees from his Sake, the slurry of rice, yeast, and Sake left over when he bottles. We noted big melon notes on his latest batch, and the pairing was natural. Of the Village: Sake + Melon takes those neighborhood lees, along with many many pounds of Honeydew Melon, and rests them in our dry cider until the flavors melded. We’re left with a supremely soft and melony cider with underlying notes of that smooth Sake that we get so excited about. Kanpai!
