Spontaneously fermented cider made with 12 varieties of apples from the Bulgarian countryside. Small batch as fruit was pressed manually - 3 & 10 October 2024.An Indian summer, called Gypsy Summer in Bulgarian, is a period of unseasonably warm, dry weather that sometimes occurs in autumn in temperate regions of the northern hemisphere. Lately, we have been observing very warm Octobers and the apples harvested for our cider are typically picked in early October when temperatures are still warm. This helps the natural fermentation of the beverage and the increased aromatics.A tradition since 2022.
