The grain recipe for City of Dreams lends itself perfectly to mixed culturefermentation, with its simple grain bill full of white wheat and flaked wheat. Instead offermenting in a stainless tank, we ran some City of Dreams wort into French oak barrels thatcontained a mixed culture of brettanomyces, wild saccharomyces, and lactobacillus. There itfermented and conditioned for several months. The result is a funky, lightly tart, and dry beerthat’s full of complex yet subtle flavors.
