Domus Folkingi is dedicated to our Friends from Folkingebrew. Without them, Tuber Meadery might never have existed.We used to gather to share and explore the world’s finest beers: hazy IPAs from Other Half, the legendary Kentucky Brunch Brand Stout from Toppling Goliath, and rare gems like Zenne B1 from 3 Fonteinen. Inspired by those nights, we started brewing ourselves. They dove into hazy IPAs, while I experimented with truffle beers that never quite worked out...Then came the night someone opened a bottle of Schramm’s Black Agnes, and I was sold on mead.After that moment my focus gradually shifted into making meads. Meanwhile, Folkinge was growing too. From impressive homebrews to becoming one of the most respected breweries in the country.Now, with the opening of Folkinge’s taproom, it felt like the right time to craft something special for them.This mead is inspired by Acerglyn Ariera, one of my first meads I ever brought to a Folkinge tasting. What stood out wasn’t the honey or fruit, but the warm spices from the cookies I had used. On request, this new batch brings those comforting, nostalgic spices to the forefront.A small token of appreciation and a big congratulations on their next chapter!Mand.
