Leaner is our Farmhouse ale brewed in collaboration with Side Project Brewing from St. Louis, MO. We share yeast cultures and peaches to each create our own version of the beer. We use both house yeast cultures to ferment the base beer in oak barrels for several months before aging the beer on whole, fresh organic peaches. Then we age the beer further on whole vanilla beans. The addition of their yeast culture to ours adds a touch more acidity and complexity. The combination of the peaches and vanilla is elegant and balanced.
