Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love - showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. Loral is a wonderfully complex varietal which has weaved its way into some of our best beers since we first got our hands on it back in 2020. Renowned as a “Super Noble” variety, this hop has lineage from French Noble hop Tardif de Bourgogne on its mother side, along with American Nugget on its father side. This means Loral expresses a wondrous bouquet of flavours that straddle a line between classic noble hops and modern American fruit forward hops. Fruity without being saturated, spicy without coming off as phenolic, earthy without tasting like dirt, and floral without smelling like grandma’s perfume, we love how this incredible varietal works in a hop-forward IPA that is typically Polly’s.
