Originally created as a tribute to the techno queen Charlotte De Witte, The Pilgrim have become a rich, Belgian IPA with wheat, oats and a slight touch of caramel malt to give it some depth.Otherwise it's the hops and the yeast that gives this beer its unique characteristics of cedar tree, pear and honey accompanied with complex fruity tones of citrus, coconut, tangerines and spicy phenolics from the yeast leaving room for the hops, but contributing to a complex, smooth mouthfeel packed with fruity esters of ripe plums and cloves.
