This version of our mixed-fermentation farmhouse ale spent almost a year fermenting in stainless steel with our house blend of brettanomyces before fermenting for another three months on whole Montmorency cherries.Once the beer was packaged in underwent a final four-month fermentation in the cans and kegs, creating the champagne-like carbonation that is one of the hallmarks of the style.The beer itself is a showcase for the cherries themselves, with secondary notes of tropical fruit, funk, and even a slight hint of cinnamon. This is a *cherry* special beer!
