We lagered our Eclipse Black IPA in a Cuban rum barrel for months. The rum yields caramel and vanilla notes that complement the coffee and chocolate notes derived from the dark malts. (This one is the 50% rum barrel aged Eclipse Black IPA and 50% Eclipse Black IPA.)
