Lambic-style spontaneous ale brewed in the winter of 2019. The beer was fermented and aged initially in brewery barrels, then transferred into a fresh chardonnay barrel from Domain Drouhin. At bottling, we pressed locally-grown vignoles grapes and pressed them so we could use the juice for bottle-conditioning!
