Apollo is a blend of traditional meads aged in mead barrels. The base for this was made with 100% Colorado wildflower honey and Rocky Mountain water. 75% was aged in a rye whiskey barrel that previously held a Hawaiian macadamia blossom mead. 25% was aged in a bourbon barrel that previously held a black currant and vanilla mead. This blend is medium-sweet and delivers layers of nuance including black currant, caramel, vanilla, and oak.
