▶ "Bing-Zhu" is brewed with a combination of Belgian Saison yeast and wild yeast, blended with West Indian cherry juice and locally grown wheat. This fermentation yields a sour beer with a delicate fruity tartness and pronounced peach aromas. A final maturation with European oak imparts complex woody notes and depth of flavor. Enjoy its vibrant fruitiness when young, or cellar it for several years to develop a rounded, mellow acidity.▶「夫天地者，萬物之逆旅；光陰者，百代之過客。而浮生若夢，為歡幾何？」 啤酒頭從 2018 年開始，每年釀造兩款使用橡木熟成的旗艦酒款，並引用《春夜宴桃李園序》的句句詩詞，作為年度特別釀造酒的命名依據。 今年 2022 則來到最動人的段落：「秉燭」「夜遊」▶【秉燭】使用比利時 Saison 酵母與野生菌種，搭配西印度櫻桃汁，並加入國產小麥，發酵出具柔美果酸又桃果味四溢的酸啤酒，並於發酵末期與歐洲橡木一同熟成，激發出木質調性的深邃美味。年輕喝享受果味，陳放數年品嘗圓潤果酸。
