Goddamn we love Westies. And what better excuse to make a massive Westie, loaded with pine, than for Carwyn Canvent.This was one of three concepts we dreamt up this year to include natively foraged ingredients in a beer. Here, we’ve harvested some native wood, toasted it ourselves, to bring some really unique flavour, and infused it into a massive, 10% Double Westie for a few days.The base Westie was straight up, base and toasted malts with loads of Simcoe, Columbus and Amarillo in the boil with Simcoe, Citra and Mosaic dry hopped.It’s piney, it’s clean, it’s dry and has a gorgeous resin that has come from the native wood. The toast is integrated, with a sweet mouthfeel and chewy finish. The wood is so nicely balanced by the beer, adding to the overall experience.
